''It's a chewy, wild fermented cider with a base of bittersweets and the odd bittersharp and sharp. Quite phenolic on the nose, with spicy, woody, earthy, smokey notes and a healthy dollop of hay barn - but no poopy which is nice! It's highly tannic;mega astringent and bitter, while Malolactic fermentation has given it a creamy palate and a slight butterscotch character. There's a tiny scratch of vinegar at the back of the throat, but otherwise it's a continuation of those big earthy, woody, spicy flavours. It's a pretty challenging cider for most folk, but a big old classic West Country cider for the hardcore heads, and would be great with some aged cheddar, Comté or Gruyère.''
